Combination Short and Long Soup

This is a great all in one dinner only limited by your imagination. This is the version I recently made.

Ingredients:

  • 750ml of good quality chicken stock (preferably home made)
  • 1tsp sesame oil
  • 1 cooked chicken breast or 2 cooked chicken thighs – shredded
  • Wontons (see my recipe) – as many as you desire
  • Chinese noodles – I usually use the dried ones. Again as much as you like but don’t over do it or you will have a mushy mess. If you use fresh ensure you rinse them 1st.
  • 1-2 shallots shredded
  • 1 carrot cut into fine sticks
  • 1/4 cup finely shredded cabbage (optional)

Method:

  1. In a large saucepan heat the chicken stock and sesame all together until just boiling
  2. Add the noodles now if they are dried otherwise add the fresh ones last
  3. Add the carrot
  4. Add wontons
  5. Add cabbage
  6. In deep bowls place the finely sliced chicken
  7. When everything is cooked and heated through ladle soup into the bowls over chicken
  8. Sprinkle with the shredded shallots
