Jaffa Muffins (Choc Chip Orange Muffins)

These are one of my favourite muffins that are worth the little bit of extra effort to make due to the need to grate the orange rind. Here is a tip to speed things up, every time you eat an orange grate the rind and store it in the freezer ready to add to your muffins.

I don’t use chocolate chips as I find them too sweet. I buy fair trade 70% chocolate block and chop it up. Of course you use whatever chocolate you prefer, milk or dark will work just fine

Perfect for the kids lunchbox.

Make a double batch, individually wrap them and store in a zip lock bag in the freezer. Defrost naturally otherwise the choc chips will become melted choc blobs

Jaffa Muffins

Ingredients

  • 3/4 cup Sugar
  • 125 g Butter – softened
  • 2 ea Oranges rind grated
  • 1/2 cup Yogurt plain
  • 1/2 cup Orange juice
  • 1 tsp Baking powder
  • 1/2 tsp Bicarbonate soda
  • 2 cups Plain flour
  • 90 g Chocolate chips

Instructions

  • Set oven to 190℃/374℉
  • Finely grate oranges
  • Cream butter and sugar
  • Add eggs and orange rind, mix lightly
  • Add yogurt, orange juice, baking powder, bicarb soda
  • Fold in flour and chocolate chips
  • Spoon into muffin pans
  • Bake for 15-20 minutes
