There is nothing like a good fresh home made ice cream. My hubby does not like really rich foods and many of the ice cream recipes are full of egg yolk. Along with the cream it makes the ice cream amazing rich and delicious. The other thing with egg based ice cream you need to cook it then cool it before mixing it to create ice cream.  So, you have to plan ahead.

So in comes my solution. No cooking required, not an egg in sight. Simple clean very vanilla ice cream (I am not sure it should be called a gelato?). The best thing about this is it takes 5 minutes to prepare. In 30-40 minutes you have a gorgeous soft serve. Put it in the freezer for a few hours if you like your ice cream more firm.

While it mixes I can do a heap of other stuff. Then come back and decant it.

Just regarding the cream. You can use thickened cream but I cannot see the point spoiling your ice cream with a few unnecessary numbers. So I just used runny cream.

One more thing it is best if you make this in an ice cream maker. I have a ice cream bowl that attaches to my Kitchen Aid so it is very simple.

Ingredients

Caster Sugar 1/2 Cup
Full Cream Milk 1 Cup
Cream 2 Cups
Vanilla Extract 1- 2 tbsp to taste

Method:

  • Add all ingredients to a jug
  • Stir until the sugar is completely dissolved
  • Add to your ice cream maker as per machines directions
