One of my favourite muffins. Worth the extra effort.
Make a double batch and freeze them. Perfect for a morning or afternoon snack.
|Plain Yogurt||1/2 cup|
|Orange juice||1/2 cup|
|Baking powder||1 tsp|
|Baking soda||1/2 tsp bicarb soda|
|Plain flour||2 cups|
|Dark Chocolate Chips||90g|
- Set oven to 190℃ (374℉)
- Finely grate oranges
- Cream butter and sugar
- Add eggs and orange rind, mix lightly
- Add yogurt, orange juice, baking powder, bicarb soda
- Fold in flour and chocolate chips
- Spoon into muffin pans
- Bake for 15-20 minutes
